Ceylon cinnamon comes from an evergreen tree that originated in Sri Lanka, a country whose former name was Ceylon. It is widely considered to be the best variety of cinnamon for health purposes.

      There are essentially two main types of cinnamon available: Cassia and Ceylon. Cassia cinnamon features a high level of coumarin, a potentially dangerous ingredient added to conventional cinnamon-flavored foods. Although banned as a flavor enhancement to foods in the U.S., coumarin is not regulated in natural products like Cassia cinnamon. Too much coumarin is toxic to the liver.
